Many recipes call for the addition of garlic, ginger and chilli. Angela’s spice mix provides a quick and convenient way to achieve this. Once prepared it can be kept in a jar in the fridge for several weeks to be used as needed.
Prepare as follows:
Mix together roughly equal quantities of bird’s eye chilli, garlic and ginger in a food mixer, adding enough olive oil to form a thick paste.
Keep refrigerated in a sealed jar.
If you need a small amount in a hurry for a particular recipe on this site, 1 tbsp of spice mix is equivalent to 1 bird’s eye chilli, 4 garlic cloves and 2 cm root ginger (all chopped fine).
